I’ve just posted one of my all time favourite recipes – Banana and chocolate loaf. This is such an easy recipe to make and is devoured more or less instantly in my house. We’ve been known to polish off an entire loaf in one sitting! I usually make a batch and freeze a loaf or two. It’s great for breakfast and we sometimes toast it with a bit of butter! Yummy!
It is a recipe I have adapted over time to be egg free so my son, who is allergic to egg, can enjoy it. He was also dairy free for a while so I used dairy free chocolate chips instead of regular chocolate. It’s a recipe close to my heart as it was a staple when my son was having to deal with a really restrictive diet – egg, dairy, soya, tomato, citrus and vinegar free. I spent many an hour adapting recipes as I didn’t want him to miss out. I now have a whole host of great recipes suitable for dairy, egg, soya and tomato free diets.
